There's so much in Stanley Park I'm guarranteed to miss some of it here.
The seawall wraps around most of the park and is often crowded with bikers, joggers, rollerbladers, and tourists. Being paved and accessible with views of forest and ocean all the way around makes this very popular and pleasant despite the crowds of people. To get away from the crowds, venture into the trails in the interior of the park. While mostly not paved, they are still very well kept and much more peacefull.
The aquarium is probably the most popular tourist attraction here, and may warrant it's own entry.
Stanley Park hosts many events including outdoor art shows. There are many cultural and historic landmarks scattered throughout the park, which you can randomly run across and enjoy, or if you want to be more systematic about it, check them out at http://vancouver.ca/parks/parks/stanley/landmarks.htm.
