Three Rivers Eco Lodge is a great place to stay in Dominica, whether you are expecting a local form of luxury or camping or dorm style living. Jem is the owner, and you'll get to talk with him a bunch over suppers, where you'll also meet the other guests. Suppers are big and very tasty, and even if you're not a social person, you'll probably enjoy the group that gathers. The staff are an invaluable resource for planning your next day. They know good places and not-so-good places to go, and whether you need a guide or not (and they're honest about this). We didn't take a guide anywhere, mostly because we were poor, but you definitely need one if you're doing the boiling lake hike - the canonical island hike. One guy who was staying at the lodge had gone without a guide, went off the trail, and burned his foot in boiling mud. Overall the island is very safe though. The people are friendly, there are no poisonous animals or plants, and we even walked in the jungle barefoot for a day (which was fine, but I probably shouldn't recommend it).
Three Rivers has some jungle cabins that you have to walk for 20 minutes or so to get to. We stayed in the treehouse for a couple of days, and I would do that again. It is the ideal place to stay. It is quiet up in the jungle (except for the raucous jungle noises), much cooler than down by the buildings, and there is a bit more privacy. There are electric lights there now, thanks to a wind turbine mounted in one of the tallest trees around.
Bathing is done either in the shower or in pools in one of the nearby rivers. The rivers are lovely, but sometimes the shower is a little more convenient. Either way, you can use the organic soap they provide you with (just ask) so you don't harm the water. You can drink water directly from the streams, and locals catch fish in them, so it is important to keep them clean.
I would suggest bringing snacks or buying some in Roseau. You can pay for some food at Three Rivers, but it is nice to be able to snack during the day and then have a big hearty supper. It can be hard to find places to eat in most of the small villages, so bringing your own trail mix or granola bars is highly recommended.
